Ingredients

4 carrots, chopped

3 celery ribs, chopped

1 bunch scallions, chopped

1 cup shiitake mushrooms, chopped

2 tomatoes, chopped

1 head garlic, chopped

1-inch piece fresh ginger, chopped

1-inch piece fresh turmeric, chopped

1 bunch fresh flat-leaf parsley, chopped

8 cups water or vegetable stock, store-bought or homemade

Juice of 1 lemon, or to taste

1 teaspoon crushed red pepper (optional)

Salt and ground black pepper, to taste

Directions

Combine the carrots, celery, scallions, mushrooms, tomatoes, garlic, ginger, turmeric, and parsley in a pot, add the water, and bring to a gentle boil over medium heat. Turn the heat to low and allow the soup to simmer for about an hour. Strain the soup (compost the solids), add the lemon juice and crushed red pepper (if using), and season with salt and black pepper to taste.

To use Sip throughout the day, or until you feel better.
